Hi, The manual I have states that the valve gaps should be set while the engine is ticking-over at 160F, is this right? shouldn't the engine be stopped like any other vehicle?
There was a change in the specification also. GMC issued a military service bulletin G-86 that changed the valve clearance specification on ALL 270 engines. After Dec 1943 the correct clearance is .012" Intake Valves and .016" on the Exhaust Valves.
Some earlier books called for .012" on both.
Keep a good grip on your feeler guages and have fun.

You want to glue the valve cover gasket to the head before you begin. Clean the head gasket surface with gas or alcohol. Apply permatex gold gasket cement and install the valve cover. Let it sit over night before removing.
Run the engine up to temp. I usually put a piece of cardboard in front of the radiator to make sure it stays/is warm. You want to simulate actual conditions.
The gasket will prevent you from having one hell of a mess in the engine compartment!
Turn the idle waaaay down
