Nothing bad.

You need to listen to the engine and watch the spedo at 1st to get the sound of max rpms. Once you have that implanted in your brain, you are all set.

I have removed the plates in the govenors on my original 270, the newer 302 and 2 Chev (newer) 235's. I have not had any problems. The original 270 in my cargo CCKW went 10's of thousands of miles and still works OK.

IF YOU REMOVE THE GOV THROTTLE PLATE, DO IT WITH THE GOV OFF OF THE ENGINE IN CASE YOU DROP THE SCREWS.....

it is very easy to over-rev the engine.

my truck has never been fitted with a governor, and has a Carter W1 carb

(although I have now obtained the correct carb and a governor)

with many other things to concentrate on driving, over revving happens all to easy.

I let another fellow drive my truck and he persistently overspead by up to 20%, especially in 2nd gear

Governor testing?

How can you test if the governor works? If you over rev the engine does the governor shut off the engine / hold back the trottle? And how much do you have to over rev before the governor kiks in? If accalerating i let make the engine a fair amount of revelotions (not sure if over reving)

You mention it happens all to easy. so just wondering...

Watch the speedometer. That will tell you when you are at the max speed. The speed versus gear is on the shifting dataplate

thats right. I ran my truck a year with the governor, so I know how the
engine should sound normally. Since I removed the governor, never noticed diseffects. Only better, especially if you have to be fast for a second or two in todays traffic.
