I finally found it. I have many different TM10 manuals for the CCKW, and TM10-1563 explains the correct way to rebuild the pressure plate on page 02-5.
Step 2 part b
"Shims of a thickness equal to the amount of metal removed from the pressure plate must be installed between the cover and the pivot ring as shown in Fig 8. Operation of the clutch mechanism will not be affected by the addition of shims"
Step 2 part c
"Shims are available in thicknesses of 0.015". Therefore, pressure plate must be reground in steps of 0.015" and one shim installed for each 0.015" removed."
